You are getting so many good things in these smoothies: vitamins from the veggies, protein from the nuts, etc. The fresh mint makes this smoothie unique and amazing.
Easy Green Smoothie
Ingredients:
2 cups coconut water
1/3 cup almonds
2 cups spinach
2 celery stalks, chopped
1/4 cup fresh mint
1/2 orange
1 tablespoon honey
1/2 teaspoon ginger powder
2 cups frozen peach slices or strawberries
Directions:
Place the ingredients in the order listed in a blender container and whirl until smooth. (Depending on the size of your blender – may need to be divided into two batches so the mixture doesn’t overflow.) Divide mixture among several plastic ice cube trays or silicone muffin pans and freeze until solid. Remove from pans or trays and store in Ziplock bags in freezer. When ready for a smoothie, place 1 cup coconut water or regular water in a blender followed by 2 muffin size cubes or six of the green regular size ice cubes and whirl.
Options:
Follow directions above but add another cup of fresh spinach and ½ of a banana. The banana will make the smoothie sweeter.
Follow directions above but add 1 serving of vanilla protein powder.

That’s so cool but how do you get the frozen stuff out of a muffin pan?
Hi Sandra …I recommend using plastic ice cube trays or silicone muffin pans to make these. They will just pop out. A metal muffin tin can work but you will need to fill your sink with a little warm water and dip the bottom of the pan in until the smoothie cube unfreeze a bit and come out. Hope that helps
