What to do with leftover quinoa? Open up a can of black beans and make these meatless burgers. Yes – you can saute onions in vegetable broth instead of oil.
Quinoa and Black Bean Burgers |
Ingredients:
1-1/2 cup Cooked Black Beans, divide in half
1-1/2 cup Cooked Quinoa
1 Small Onion, Chopped
3/4 cup Water
1-2 Garlic Cloves, minced or pressed
1 tsp Cumin
3 Tbsp Vegetable Broth
Directions:
- Saute chopped onion in vegetable broth until soft. Add 3/4 cup beans, garlic and water. Cook until water is almost evaporated.
- Transfer mixture to food processor. Add cumin. Mix until smooth.
- Place mixture from food processor into a medium bowl and add the quinoa and remaining 3/4 cup of black beans. Mix – using your hands works well.
- Form into rounds and flatten. These have a tender texture to them so using a spatula or a multi-purpose pastry scraper will be helpful in transferring from counter to pan. It can be helpful to chill these for several hours or overnight to firm up slightly.
- Heat a griddle or skillet (lightly coat with PAM) and cook burgers until brown on both sides.
- Note: I like to serve these on Oroweat Multigrain Sandwich Thins and all the fixings I would put on burgers. The one pictured has cashew cheese, lettuce, relish, ketchup and mustard with a side of baked tortilla chips /salsa, watermelon and baked sweet potato fries.
