This warm cereal is good enough to be used as a cold dessert. I like to make it with a variety of berries and freeze the extra into portion control containers for an easy breakfast to grab and go during my work week.
Berry Hot Cereal
Ingredients
3/4 cup of quinoa
1/4 cup of buckwheat
2 1/4 cups of water
4 cups of frozen berries (In this version-I used 2 cups blueberries and 2 cups mixed berries
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla
4 packets of stevia or sweetener, your choice
Fresh Strawberries, sliced
Raw Sunflower Seeds and Unsweetened Coconut, optional
4 tsp of pure maple syrup or honey
Directions
- Place quinoa and buckwheat in large pan
- Add water and mix to combine
- Add frozen berries and mix to combine
- Heat to boiling. Turn down to low and simmer 15-20 minutes until cereal is fully cook and water is absorbed
- Add cinnamon, nutmeg, vanilla and sweetener and combine well
- Place 1/4 of recipe in a bowl and top with strawberries, sunflower seeds and coconut
- Drizzle top with 1 tsp of maple syrup or honey
