Caribbean Salad

This salad can either be prepared with all the ingredients or just a few but don’t miss the pineapple salsa.

Caribbean Salad


4 cups of romaine lettuce, cut in small pieces
1/2 cup of pinto beans
7 cherry tomatoes, quartered
1/2 carrot, shredded
1/2 cup purple cabbage, sliced thin
1 green onion, diced 
1/2 papaya or mango, cut in small pieces
1/4 avocado, cut in small pieces
2 Tbsp of cilantro, cut in small pieces
3 Tortilla Chips, crushed

1/3 cup pineapple salsa (purchased or homemade)
1/3 cup salsa
1 Tbsp of Mango-Pineapple Fruit Spread (I found at Whole Foods), optional
1/4 cup of diced pineapple (fresh or canned)

Place all ingredients except tortilla chips and salsa in a large bowl and mix well.
Mix salsa ingredients together in a small bowl and add to salad, mixing well. 
Sprinkle tortilla chips on top.
