Thai Noodles

This dish is very easy to prepare and can be tweaked in several ways…Add meat or seafood and/or an assortment of steamed vegetables.

Ingredients
  1. 1/4 lb thick rice noodles (uncooked) - I like Tinkyada Brown Rice Pasta (Whole Foods)
  2. Sauce
  3. 2 Tbsp Tamari or Soy Sauce
  4. 1 Tbsp almond butter, creamy
  5. 1 Tbsp sweet red chili Asian sauce
  6. 1/4 tsp of garlic powder
  7. 1/4 tsp ground ginger
  8. 1/4 tsp cayenne pepper
  9. 2 Tbsp of hot water
  10. Toppings
  11. Cilantro, chopped
  12. 1 Green Onion, sliced thinly
  13. 2 Tbsp of your choice nut, chopped
Instructions
  1. Cook noodles following package directions or until desired doneness. Drain noodles.
  2. To make the sauce, mix all remaining ingredients until well blended except cilantro, green onion and chopped nuts.
  3. Place drained noodles and sauce into medium size bowl and mix well.
  4. Place 1/2 of recipe on plate and top with half of the cilantro, green onion and chopped nuts.
Notes
  1. Chicken can be added as well as other veggies.
