The ingredients may seem a little strange but this simple cookie is amazingly good plus it has a limited amount of sugar in it and healthy fats.

- 1/4 cup Coconut Oil
- 1 tsp Almond Extract
- 2 Tbsp Milk (I use unsweetened almond milk)
- 1/2 cup Powdered Sugar plus extra for dusting
- Candied Sprinkles, if desired
Directions
- Preheat oven to 325 degrees.
- Prepare cookie sheet by lining with parchment paper.
- In a bowl mix flours together. Set aside.
- In another bowl combine butter, oils, almond extract, milk and sugar. Mix well.
- Combine dry and wet ingredients until dough holds together.
- Roll cookies into small balls or use a cookie scoop.
- Dip top of cookie in sprinkles, if desired.
- Place cookies on sheet - about 1 1/2 inch apart.
- Bake for 20-25 minutes or until light golden brown.
- Cool for 10 minutes and then move to cooling rack for 15-20 minutes.
- While cookies are still warm dust with powdered sugar.
- Continue to cool on rack.
- Makes 24 - 36 Cookies, depending on how big you make them.
Notes
- These cookies freeze very well.
