Almond Cookies

The ingredients may seem a little strange but this simple cookie is amazingly good plus it has a limited amount of sugar in it and healthy fats.

This cookie is wonderful with a warm cup of coffee or tea.

Ingredients
  1. 2 cups Flour (I use White Spelt)
  2. 1/2 cup Almond Flour
  3. 1/2 cup Butter, softened
  4. 1/4 cup Olive Oil
  5. 1/4 cup Coconut Oil
  6. 1 tsp Almond Extract
  7. 2 Tbsp Milk (I use unsweetened almond milk)
  8. 1/2 cup Powdered Sugar plus extra for dusting
  9. Candied Sprinkles, if desired
Directions
  1. Preheat oven to 325 degrees.
  2. Prepare cookie sheet by lining with parchment paper.
  3. In a bowl mix flours together. Set aside.
  4. In another bowl combine butter, oils, almond extract, milk and sugar. Mix well.
  5. Combine dry and wet ingredients until dough holds together.
  6. Roll cookies into small balls or use a cookie scoop.
  7. Dip top of cookie in sprinkles, if desired.
  8. Place cookies on sheet - about 1 1/2 inch apart.
  9. Bake for 20-25 minutes or until light golden brown.
  10. Cool for 10 minutes and then move to cooling rack for 15-20 minutes.
  11. While cookies are still warm dust with powdered sugar.
  12. Continue to cool on rack.
  13. Makes 24 - 36 Cookies, depending on how big you make them.

  1. These cookies freeze very well.
