  2. found you on Favorite Things Thursday blog hop and glad I did…looks like my type of breakfast…I might even get my son to take a bite.

    • Thanks for stopping by for a visit. Let me know if you get your little boy to actually take a bit. Dinosaurs used to eat lots of greens – maybe that will help him eat the spinach.

  3. Debbie this looks so good! Thank you for sharing at the Thursday Favorite Things Blog Hop xo

    • My pleasure – thanks for having me and stopping by for a visit and some kind words.

  4. I love Mexican any time of day. This looks fantastic! I struggle with getting more vegetables into my morning routine. This will certainly help me with that.

    • Hi Christina – Thank you for stopping by. I know what you mean about the veggies. I think the spinach works really well with this dish. Putting it on raw and then covering with the warm egg gives it a nice wilting.

  5. Debbie this looks delicious
