Southwest Egg Breakfast

Ingredients
  1. 1 egg
  2. 1 egg white
  3. 1 tortilla (Wheat or Spelt)
  4. 1 cup fresh spinach
  5. 1/4 small avocado (mashed) plus a slice for garnish
  6. 2 Tbsp of salsa (see link below for salsa recipe) or use your favorite
  7. 1 piece of turkey bacon, crumbled
  8. 1 Tbsp of cheese, your choice
Instructions
  1. Spray small skillet with non stick spray and heat over low medium heat.
  2. Beat eggs together and pour into pan.
  3. Cook until set on one side and then using spatual flip and continue cooking until done.
  4. OR
  5. Spray a flat salad bowl with non stick spray.
  6. Pour beaten eggs into bowl. Do not cover.
  7. Microwave on high for 1 minute - it will make a popping sound. Check for doneness. Cook a few seconds more if needed.
  8. Tortilla can be used out of the package or for a firmer tortilla warm in skillet a bit on each side. Watch carefully - it won't take long.
  9. Spread mashed avocado on tortilla.
  10. Place spinach on top.
  11. Place egg on next.
  12. Spoon salsa on.
  13. Sprinkle crumbled bacon and cheese on top and garnish with avocado slice.
Notes
  1. This can be an extra fast breakfast to fix if the eggs and bacon are cooked ahead of time.

    • Hi Christina – Thank you for stopping by. I know what you mean about the veggies. I think the spinach works really well with this dish. Putting it on raw and then covering with the warm egg gives it a nice wilting.
