This breakfast is sure to please – cut it like a pizza and it is easy to pick up and eat
South of the Border Tortilla

Ingredients
- 1 egg
- 1 egg white
- 1 tortilla (Wheat or Spelt)
- 1 cup fresh spinach
- 1/4 small avocado (mashed) plus a slice for garnish
- 2 Tbsp of salsa (see link below for salsa recipe) or use your favorite
- 1 piece of turkey bacon, crumbled
- 1 Tbsp of cheese, your choice
Instructions
- Spray small skillet with non stick spray and heat over low medium heat.
- Beat eggs together and pour into pan.
- Cook until set on one side and then using spatual flip and continue cooking until done.
- OR
- Spray a flat salad bowl with non stick spray.
- Pour beaten eggs into bowl. Do not cover.
- Microwave on high for 1 minute - it will make a popping sound. Check for doneness. Cook a few seconds more if needed.
- Tortilla can be used out of the package or for a firmer tortilla warm in skillet a bit on each side. Watch carefully - it won't take long.
- Spread mashed avocado on tortilla.
- Place spinach on top.
- Place egg on next.
- Spoon salsa on.
- Sprinkle crumbled bacon and cheese on top and garnish with avocado slice.
Notes
- This can be an extra fast breakfast to fix if the eggs and bacon are cooked ahead of time.

Hi Christina – Thank you for stopping by. I know what you mean about the veggies. I think the spinach works really well with this dish. Putting it on raw and then covering with the warm egg gives it a nice wilting.
