Pumpkin Muffins

Ingredients
- Dry Ingredients
- 2 cups of spelt flour or your choice of flour
- 2 Tbsp of flax meal
- 1 tsp salt
- 1 Tbsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup sugar
- Wet Ingredients
- 1 1/4 cup canned pumpkin
- 1/4 cup almond milk or your choice of milk
- 1 tsp pure vanilla extract
- 1 Tbsp apple cider vinegar
- 1/4 cup agave or maple syrup
- 1 flax egg (1 Tbsp of flax meal mixed with 3 Tbsp of water - let sit for 2 minutes) or 1 egg
- 1/3 cup unsweetened applesauce
- 3 Tbsp virgin coconut oil, melted
- Glaze Ingredients
- 1/2 cup of powdered sugar
- 1-2 Tbsp of almond milk or your choice of milk
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Line muffin tin with liners
- 3. Sift dry ingredients into a bowl
- 4. Combine wet ingredients in a separate bowl.
- 5. Add wet ingredients to dry and combine.
- 6. Fill muffins high.
- 7. Bake 25-30 minutes or until a toothpick inserted comes out clean.
- 8. Allow to cool.
- 9. Mix glaze ingredients and mix until smooth.
- 10. Drizzle glaze on cool muffins.

I’ve never tried pumpkin for anything other than pie. May have to give these a whirl. They look wonderful.

I think pumpkin is one of those canned goods that we get used to thinking about in relation to pie but it is good in any recipe that uses smashed banana. Hope they are something you enjoy if you should try.
