Pumpkin Muffins

Make a batch of these and enjoy the warm smell of fall that fills your entire house.  Yummy for your nose and your tummy.

  1. Dry Ingredients
  2. 2 cups of spelt flour or your choice of flour
  3. 2 Tbsp of flax meal
  4. 1 tsp salt
  5. 1 Tbsp baking powder
  6. 2 tsp cinnamon
  7. 1/2 tsp nutmeg
  8. 1/2 cup sugar
  9. Wet Ingredients
  10. 1 1/4 cup canned pumpkin
  11. 1/4 cup almond milk or your choice of milk
  12. 1 tsp pure vanilla extract
  13. 1 Tbsp apple cider vinegar
  14. 1/4 cup agave or maple syrup
  15. 1 flax egg (1 Tbsp of flax meal mixed with 3 Tbsp of water - let sit for 2 minutes) or 1 egg
  16. 1/3 cup unsweetened applesauce
  17. 3 Tbsp virgin coconut oil, melted
  18. Glaze Ingredients
  19. 1/2 cup of powdered sugar
  20. 1-2 Tbsp of almond milk or your choice of milk
  1. 1. Preheat oven to 350 degrees.
  2. 2. Line muffin tin with liners
  3. 3. Sift dry ingredients into a bowl
  4. 4. Combine wet ingredients in a separate bowl.
  5. 5. Add wet ingredients to dry and combine.
  6. 6. Fill muffins high.
  7. 7. Bake 25-30 minutes or until a toothpick inserted comes out clean.
  8. 8. Allow to cool.
  9. 9. Mix glaze ingredients and mix until smooth.
  10. 10. Drizzle glaze on cool muffins.

  2. I’ve never tried pumpkin for anything other than pie. May have to give these a whirl. They look wonderful.

      I think pumpkin is one of those canned goods that we get used to thinking about in relation to pie but it is good in any recipe that uses smashed banana. Hope they are something you enjoy if you should try.
