Here is last night’s dinner story.
My day began with a boot camp workout, worked all day, husband decided to have leftover pork chops (I don’t like pork – please no emails) and the search begins. You know about the search – the what am I going to make for dinner because I’m hungry and could easily grab a spoon and the jar of peanut butter?
But I spied some pinto beans in the refrigerator and some leftover cut up veggies. We always keep tortillas in the freezer. Soon I knew I’d be okay. It was simple, clean and delicious plus that peanut butter never reached my lips.
Meatless Soft Taco

A fast easy lunch or dinner
Ingredients
- 1 Tortilla (I used spelt)
- Drained Pinto Beans
- Shredded Mexican Cheese
- Tapatio Sauce
- Fresh Spinach
- Beet, Sliced Thin
- Carrot Sliced Thin
- Chopped Avocado
Instructions
- Lay tortilla on a paper towel.
- Place beans in center. Sprinkle with Cheese. Microwave until cheese melts and beans are warm.
- Top with Tapatio Sauce and fresh veggies.
- Enjoy.
Notes
- Keep tortillas in the freezer so they are always available.

I’m with ya on the pork…and I grew up on a pig farm. They can email ME, ha ha. We are so big on the soft tacos, hard shell tacos and burritos. Love them.
I have loved your furniture and pot redo items…so cute. I’m going to try the pot one. I’m going to post some of my design stuff, finally. Have never done it.

Such a great idea to leave tortillas in the freezer. My husband always buys a big pack of them and doesn’t finish them so we end up throwing a few away. I love how colorful your taco ends up being!

My husband is in charge of the freezing of tortillas and because we use spelt because of his wheat sensitivity, he brings them home and places small pieces of wax paper in between so they don’t stick after being frozen. Tacos are one of our favorites. My 8 year old daughter is experimenting with being a vegetarian and tacos are a meal that work out nicely for all of us. Everyone gets to make their taco however they like it. I had never thought to use beets. I bet that gives a really rich flavor and such beautiful color. I will have to try your recipe soon.
