Omelette Breakfast

Protein, Dairy, Vegetables, Fruit and Healthy Fats – oh my.   This omelette is shown with a simple spinach salad and a toasted biscuit with grass fed butter and apricot fruit spread.  Choose the healthiest ingredients you can within your budget.  Then let me ask you a question:  Does your budget or what you are spending money on need to be adjusted for a healthier lifestyle?  One ingredient at a time is all it takes.

Taking the standard breakfast favorite up a notch by hitting all of the food groups.

Ingredients
  1. 2 eggs (preferably organic, range free)
  2. Non stick spray
  3. 1 oz cheese (preferably from grass fed cows)
  4. 1 piece of turkey bacon - cooked
  5. Spinach
  6. Strawberries
  7. Raw Sunflower Seeds
  8. Oil and Vinegar Dressing - only need 1 tsp. (preferably olive or avocado oil)
  9. Biscuit - Toasted
  10. Butter - Grass Fed
  11. Fruit Spread - Apricot
Instructions
  1. Spray a shallow salad bowl with non stick spray
  2. Crack eggs and stir gently.
  3. Season as desired
  4. Cook in pan over low medium heat in non stick pan - when cooked 3/4 of the way gently flip over setting the other side or cook on high in microwave for 1 to 1-1/2 minutes.
  5. Place cheese and bacon on one side of egg and fold over.
  6. Place spinach on plate. Top with sliced strawberries and raw sunflower seeds.
  7. Choose a piece of bread - mine was a spelt biscuit (link listed below) that I toasted. Top with a small amount of butter and fruit spread.
Notes
  1. Note - Cleaning your vegetables and fruits ahead of time makes eating healthy so much easier.

      I know, right, we get so used to certain foods needing to be for certain times of day but I really don’t think our stomachs know any difference. Plus anytime you can add veggies it’s a good thing.
