Fall brings the pomegranate. This gorgeous fruit adds a sparkle to anything it is used on and this kale-arugula salad serves as an example.
Pomegranate Salad

The sweetness of the pomegranate work well with the kale and argula.
Ingredients
- Chopped Kale
- Arugula
- Heirloom Tomatoes, cut in 8 pieces
- Baby Cucumber, sliced
- Red Pepper, sliced thin
- Pomegranate Seeds
- Raw Sunflower Seeds
- Lemon
Instructions
- Place kale on plate.
- Place arugula on top.
- Place tomato around the greens
- Place a few slices of red pepper and a slice of cucumber in between the tomatoes.
- Sprinkle pomegranate seeds and sunflower seeds on top.
- This salad can be dressed simply with fresh lemon juice or your dressing of choice.

I love pomegranates!! They are wonderful to eat right from the fruit or on a salad. 🙂 But…I have never made a salad with kale. The kale and arugula is an interesting combination.
