Fall brings the pomegranate.  This gorgeous fruit adds a sparkle to anything it is used on and this kale-arugula salad serves as an example.

Ingredients
  1. Chopped Kale
  2. Arugula
  3. Heirloom Tomatoes, cut in 8 pieces
  4. Baby Cucumber, sliced
  5. Red Pepper, sliced thin
  6. Pomegranate Seeds
  7. Raw Sunflower Seeds
  8. Lemon
Instructions
  1. Place kale on plate.
  2. Place arugula on top.
  3. Place tomato around the greens
  4. Place a few slices of red pepper and a slice of cucumber in between the tomatoes.
  5. Sprinkle pomegranate seeds and sunflower seeds on top.
  6. This salad can be dressed simply with fresh lemon juice or your dressing of choice.
