Quiche

I’m kind of on an egg roll lately – not an “egg roll” but recipes that have to do with eggs. Here is a quiche that works well for breakfast, lunch and dinner.  It is also a good fit if you need to take something to a pot luck or a dish to someone in need.  PS – Yes – it can be made gluten free by using a GF pie crust – I used a frozen premade one.

Ingredients
  1. 1 uncooked pie crust - I used a frozen gluten free
  2. 1 1/4 cup of shredded cheddar cheese
  3. 1 cup of refrigerator hash browns
  4. 2 green onions, diced
  5. 4 pieces of turkey bacon, cooked and chopped
  6. 3 eggs
  7. 1/2 cup milk - I used unsweetened almond milk
  8. Pepper Sauce - to taste
  9. 1 tsp prepared mustard
  10. 3/4 cup cilantro, chopped
  11. Salt and Pepper - to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Cook bacon and cool until it can be chopped up.
  3. Blend eggs, milk, salt, pepper, mustard and pepper sauce.
  4. Place 3/4 cup of cheese in bottom of pie crust.
  5. Place hash browns on top.
  6. Next add the chopped bacon.
  7. Spoon the egg mixture over the top.
  8. Add more cheese and cilantro.
  9. Bake for 45-50 minutes or until top browns and a toothpick comes out clean in center.
  10. Cool for 15 minutes and slice.

      Quiches work well for any meal. Funny coming from a person who as a kid hid eggs in her cheeks and needed to go to the bathroom. Thanks for visiting and leaving a note. It means a lot.
