Salted Caramel Cookies

Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 3/4 cup flour - I used White Spelt
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Himalania Fine Pink or Celtic Salt
Instructions
- Preheat oven to 350 degrees.
- Prepare baking sheet with parchment paper.
- Cream butter and sugar until smooth.
- Add egg and vanilla. Mix well.
- Sift together flour, salt, baking soda, cinnamon and nutmeg in a separate bowl.
- Mix dry ingredients in wet.
- Chill for 1/2 hour.
- Roll into marble size balls.
- Sprinkle lightly with Himalania Fine Pink or Celtic Salt.
- Bake for 8 minutes or until golden brown.
- Let rest for 5 minutes and remove to cooling rack.
