Seasoned Quinoa Salad

A wonderful combination of greens, veggies, olives, quinoa and pecans
Ingredients
- 1/3 cup of seasoned quinoa (see below for recipe)
- Kale - cut in strips
- Spinach
- Microgreens
- Romaine lettuce - cut in strips
- Cherry Tomatoes - cut in half
- Cucumber - sliced thin
- Mini Pepper - sliced thin
- Black Olives - sliced thin
- Pecan pieces
- Red Wine Vinegar
- Lemon Juice
- Salt and Pepper
Instructions
- You can use any combination of these ingredients.
- Top with the quinoa (cold)
- Sprinkle red wine vinegar on top.
- Squeeze lemon juice on top.
- Season with salt and pepper, as desired.
