Peach Smoothie

Leftover coconut milk, the first fresh peaches of the season, banana and a little fresh mint got me pretty excited when I was creating this one.  It has a smooth texture and the mild flavors blend so lovely together.  Fresh peaches not in season – use frozen – just cut back on the ice.

Peach Smoothie
Serves 1
Peaches, Coconut Milk, Banana and Mint - this combo sounded so good on a hot summer day. Add a little protein powder and I'm calling it lunch.

Ingredients
  1. 1/2 cup canned coconut milk
  2. 1/2 cup unsweetened vanilla almond milk
  3. 1 cup peaches (I used a combo of fresh and frozen)
  4. 1/2 banana
  5. 2 mint leaves
  6. 1 scoop of vanilla protein powder
  7. 1 Tbsp of ground flax seed.
  8. Ice cubes - 3 - 4 but depends on whether you are using frozen peaches and/or banana

  1. Frozen peaches can be used - adjust ice
