Recently I found myself with a large bunch of ripe bananas sitting on my kitchen counter. Soon muffins were baking in my oven and the rest were prepped for the freezer.
Here are a few recipes the next time you need some ideas that involve this fruit.
Banana Muffins – I added zest from a fresh orange and 1 tsp of almond extract for a little something extra. And speaking of something a LITTLE extra – don’t forget to save some batter for some mini muffins for those sweet tiny hands you love.
Note – Measure out the dry ingredients while you have everything out and make your own muffin mixes. Store in the freezer. Next time you want to make banana muffins – add the wet ingredients and your home will soon smell delicious.
Strawberry-Banana Better Than Ice Cream – This recipe will utilize frozen bananas. Peel bananas, cut in pieces, lay on a cookie sheet lined with parchment paper and place in freezer until frozen. Store in zip lock bag in freezer.
Banana Cake – A moist cake with a smooth buttercream frosting. Need a cake in the future – Bake this cake – cool – wrap well and then when you are ready – thaw and frost.
Strawberry Banana Protein Smoothie – Utilizing those frozen bananas again. Can be make with or without protein powder.

Thanks for stopping by – You are right they work well in smoothies. I just used some in my chocolate, almond butter, spinach and banana protein smoothie this morning for breakfast.
