Pantry Investment – Olive Oil and Balsamic Vinegar

This weekend was extra special because we had our grandson overnight.  Before his mommy and daddy came – I made myself a hearty lunch because let’s be real – it takes a lot of energy to play ball, go to the park, ride the train, and make blueberry pancakes.

Mixed Salad

The ingredients were abundant:  kale, spinach, micro greens, avocado, radish, cucumber (the middle removed), purple cabbage, strawberries and roasted turkey.  But what made this salad extra special was the meyer lemon olive oil and balsamic vinegar drizzled over the top.  Years ago I learned that an investment of a higher priced balsamic vinegar really makes a difference.  It is delicious on salads, on top of fish or over fresh berries.

  1. We LOVE balsamic vinegars and flavored olive oils!! There is a place near our house where we get them. My favorites are Honey Ginger Vinegar and a Herb Olive Oil. They are great on salads and all kinds of vegetables!! Thanks for sharing on Wake Up Wednesday Linky 🙂

  4. Hi Debbie, This salad looks delicious and the bright, vibrant colors are getting me excite about Spring. Love that jelly bean center piece – so cute! You make everything look so great.

    By the way, loving the pots and pans. I have only used the Dutch Oven item I won. I wont have room for the entire set in the tiny temporary condo we are currently in. I will need to wait until we buy a home to test out the others, so the rest are in storage for now. This seems to be my new go-to pan. I knew it would be.

    I started my elimination diet almost a week ago (for food allergies, so that beautiful waffle iron that Calphalon sent me will also need to wait until I can eat this kind of stuff again. My mouth is watering with anticipation.
