Carrot Pecan Muffins

I’ve baked for over 40 years but I think one of the fascinating things I am learning as I build my skill in the kitchen is how incredible things can taste with healthier ingredients.    These yummy muffins are made with almond flour and natural sweeteners (or I used Fruit Sweet).

A delicious gluten free muffin that has a sneaky way of including vegetables.

Ingredients
  1. 2 1/2 cups blanched almond flour
  2. 3/4 tsp baking soda
  3. 1/4 tsp sea salt
  4. 1 tsp ground cinnamon
  5. 4 large organic eggs
  6. 1 medium ripe banana (1/4 cup)
  7. 1/4 cup melted coconut oil
  8. 2 Tbsp pure maple syrup or honey
  9. 1 1/2 cups shredded carrots
  10. 1/4 cup of chopped pecans
  11. Extras for garnish
Instructions
  1. Preheat the oven to 350 degrees.
  2. Line a 12-cup muffin pan with paper liners
  3. In a medium mixing bowl, whisk together the dry ingredients and set aside.
  4. In a smaller mixing bowl, whisk together the eggs, mashed banana, coconut oil and sweetener.
  5. Stir in the shredded carrots and chopped pecans.
  6. Pour the wet ingredients into the dry and mix together.
  7. Scoop the batter by large spoonfuls into prepared pan.
  8. Bake 30-35 minutes. Cool on wire rack. Makes 11-12 muffins
Notes
  1. These freeze very well.

Thanksgiving 2014 - Pilgrims

I’m putting together my list for next Thursday and thought I’d share a few recipes I’ll be using.  The Overnight Rolls Recipe is from Trisha Yearwood  and I love it.  I’ll be making the dough and baking these this weekend, then place in the freezer until they are popped back  into the oven to warm up for Thanksgiving..  This is the easiest yeast roll recipe I’ve ever made and they taste like my Grandma Leona used to make.  I’ll also be making my pie crust dough this weekend, patting into discs and then wrapping in saran wrap and foil for the freezer.  These will go into the refrigerator to thaw a day before pie baking time.  In addition to our pumpkin pies, I’ll be making this Caramel Upside Down Cake which was tweaked from a 1940’s cookbook of my Grandma Bertha.

Menu:  Roasted Turkey, Stuffing, Mashed Potatoes, Gravy, Sweet Potato Casserole, Yeast Rolls, Butter, Cranberry Sauce, Caramel Upside Down Cake, Pumpkin Pie and Whipped Cream

Here is the schedule (I’m doing this more for me than you)

90% of grocery shopping is done

Turkey is in freezer defrosting

This weekend – Make yeast rolls and pie crusts for freezer, Set table

Monday – Last few shopping items

Tuesday – Pie crusts – freezer into refrigerator to thaw

Wednesday – Make pumpkin pies,  caramel upside down cake, whipping cream, and sweet potato casserole

Thursday – Take rolls out of freezer, Turkey goes into oven at 10 a.m., Make stuffing, Cook green beans, mashed potatoes, gravy cranberry sauce, butter and salt/pepper on the table.

Cooking is one way of expressing love to my family.  I pray you have a blessed Thanksgiving.

Did Someone Say Date?

The word date can mean so many things – we can make something yummy with dates, we can make a jar to save our change and go out with someone special or we can have fun with a little person in the kitchen.

First up – I made these amazing date bars from Elizabeth Finch – You can find the recipe HERE  They are made with good clean ingredients – almond flour, dates, honey, egg, nuts, etc. and are gluten free.  

I didn’t have pecans so I used a mixture of raw almonds, cashews and unsweetened coconut for the top.  I’m going to warn you that you’ll want to double this recipe because they are so yummy.  I found that after cutting into bars, wrapping in syran wrap and placing them in the freezer on a cookie sheet for about an hour.  Then I place all the wrapped up little presents in a large Ziplock bag to store in the freezer.  They can be eaten as a bar or sliced once you are ready to enjoy. 

I knew this was the recipe I wanted to try my new Vietnamese Cinnamon in – oh this was so worth the $8.00 – purchased at Sur la Table.
