Banana Cake

 
This is one of my family’s favorite desserts.  It is easy and goes together quickly plus you will no longer throw away ripe bananas.  This cake also freezes beautifully.  My son-in-law especially likes it when the cake doesn’t bake evenly in the center and there is an extra thick layer of frosting.  Because of food sensitivities in our family, our cakes are made with white spelt flour and almond milk but an unbleached white flour and dairy milk will work as well.
 
This weekend I made a banana cake decorated with rainbow sprinkles with a two-fold purpose.  One was in honor of the 2018 Noah’s Kindness which begins in October.  I am blessed to work with Angie and below you will find in her own words what the event she and her husband Jarrett created is all about.

What I love about Noah’s Kindness –
  • This is an easy way for all of us to spread a little kindness into our community and families.

  • You can choose your own act of kindness to perform no matter where you live.  It doesn’t need to be anything grand.  Maybe you make a banana cake and surprise someone.
  • It is such an example of a family taking some of the pain the loss of Noah brought and turning it into an event that is positive and honoring
  • Knowing this sweet family
  • A reminder of how important each act of kindness is and helps me practice a character in myself that I want to grow.

But after a few cream puffs with strawberry whipped cream were added, this cake was delivered to my daughter and her family to mark a very special occasion – the addition of a new sweet grandchild adopted through foster care.  This was especially meaningful since my husband is adopted.  I have included my daughter’s blog post below because she can speak to this topic much better than I – HERE

Here are a few takeaways I took from this experience – 

  • It is a journey to reading what the bible guides us to do in the subject of caring for others and actually letting Jesus walk you through the steps of doing it.  I will admit that when Tamara and Josh shared their desire to do this, I had a lot of questions.  I really appreciated them giving our family the freedom to ask and answer to the best of their ability.  
  • Watching what stability and care can provide on a daily basis is like watching a withering flower being brought back to its beauty with regular watering.  It was a miracle playing out in front of our eyes.  Every milestone we continue to delight in.
  • I remember one day coming to the truth that I wasn’t being asked to be the mother but the grandmother to another little one and that seemed completely doable and worry seeped away.  This has been a growth to my faith and character.
  • My heart is a house with many rooms and there is a room in my heart for our new addition who I love dearly and can’t imagine our family without him.
Colossians 3:12 Therefore, as God’s chosen people, holy and dearly loved, clothe yourselves with compassion, kindness, humility, gentleness and patience.

Cake
  1. ½ cup butter, softened
  2. 1 cup sugar
  3. 2 eggs
  4. ½ tsp pure vanilla extract
  5. 1-1/4 cups White Spelt flour or flour of your choice
  6. ¾ tsp baking soda
  7. ½ tsp salt
  8. ¾ cup mashed ripe banana
Frosting
  1. ½ cup butter, softened
  2. ¼ cup milk
  3. 1 tsp pure vanilla extract
  4. 2-1/2 cups powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture, beating just until combined. Fold in banana.Pour into a greased 8-in baking dish. Bake at 350 degrees for 30-35 minutes or until toothpick inserted in the center comes out clean. Cool completely on a cooling rack.
  3. In a mixing bowl, cream butter. Beat in the milk, vanilla, salt and enough powdered sugar to achieve a spreading consistency. Beating this frosting for 3-4 minutes will produce a silky smooth icing. Spread on top of cake.

Ingredients
  1. Cream Puffs
  2. 1 egg white, beaten (optional)
  3. 1/2 cup of butter
  4. 1/4 tsp salt
  5. 1 cup of boiling water
  6. 1 cup of flour
  7. 4 eggs
  8. Marscarpone Whipped Cream Filling - http://www.myrecipes.com/recipe/mascarpone-cream-0
  9. 1 (8-oz.) container mascarpone cheese
  10. 1/4 cup powdered sugar
  11. 2 teaspoons vanilla extract
  12. 1 cup whipping cream
  13. 1/4 cup Dark Chocolate Chips - optional
Instructions
  1. Cream Puffs
  2. Preheat oven to 450 degrees F
  3. In medium saucepan, combine butter, salt and boiling water and heat until entire mixture boils. Reduce heat, add flour all at once and stir vigorously until mixture forms a ball and pulls away from the side of pan.
  4. Remove from heat and add eggs, one at a time, beating thoroughly after each addition. Continue beating until mixture is thick and shiny and breaks from side of bowl. (I take the mixture and place in my Kitchen Aid bowl before adding in the eggs. I also break each egg into a separate bowl ensuring that no shells go into cream puff batter.)
  5. Using a small cookie scoop, place 2 inches apart onto parchment paper lined cookie sheet.
  6. Brush tops with beaten egg white (optional).
  7. Bake at 450 degrees for 20 minutes.
  8. Reduce heat to 350 degrees and bake for additional 20 minutes or until golden brown. Turn off oven. There should be a hollow sound when tapped.
  9. Cool on cookie sheets for 30 minutes.
  10. With a serrated knife gently cut each puff in half with a top and bottom and lay out on cookie sheet, cut side up.
  11. Carefully pick out any doughy pieces.
  12. Place shells back in oven (The oven is off but still warm) for 30 minutes. This will dry out the insides of the shells.
  13. Cool completely before filling with the mascarpone whipped cream filling or custard of your choice.
  14. Mascarpone Whipped Cream Filling
  15. Beat whipped cream at medium speed until stiff peaks form. Set aside.
  16. In a medium bowl, Beat mascarpone cheese, powdered sugar and vanilla until well blended.
  17. Fold whipped cream into cheese mixture.
  18. Place in a decorator bag and pipe into the bottom half on each cooled cream puff.
  19. Optional chocolate drizzle - place chocolate chips in small microwave bowl - heat in 15 second increments, stirring between each until chocolate is melted and smooth. Using a spoon - drizzle on top or melted chocolate can be placed in a small decorator bag with small round tip. Place cream puffs on cookie sheet and refrigerate until chocolate is hardened.
  20. Place finished puffs on plate and dust with powdered sugar.
Notes
  1. Unfilled shells can be stored in Freezer Ziplock bags for up to 3 months.
  2. When ready to use. Defrost on counter and pipe in filling.

Gingerbread Kit – Beware

When my children were small, we used to make Christmas gingerbread houses out of graham crackers, clean meat trays and small milk cartons.  But in today’s world gingerbread kits are widely available for most holidays as “convenience products”.  My daughter loves gingerbread so the marketers definitely have her attention.  In fact this past Sunday as my husband and I watched the grandchildren (ages 5, 3 and almost 1) while their parents attended a training at church, there on the kitchen counter sat this box promising a creative masterpiece – the turkey kit that my daughter had provided for something to do after dinner and Grandma would help them.   I remember looking at the kit with a bit of concern because construction isn’t an area I’ve been gifted with.

So after dinner, my husband took the baby over to the carpet to watch and we broke the box open.  In front of me lay several gingerbread cookie pieces, some gummy type of candy, a package with a few m&m’s and a packet with the smallest round candy balls I’ve ever seen.  I was looking for the frosting, thinking there would be a can of ready made but instead there was a small bag of powdered sugar with these directions – whip an egg white until firm (what? are you kidding me), add sugar and a few drops of vinegar.   I needed to find the mixer and the beater, I needed to divide the candy in two bowls (already foreseeing the future of those little ball candies all over the place).  But there was no way I could tell two children looking expectedly at me that we weren’t going to make the turkey gingerbread.  

The mixer was found and two chairs were pulled up to the kitchen counter, safety instructions were given and my grandson became the power source of the Kitchen Aid Mixer while my granddaughter was in charge of the lever that locks the  machine down.  Two roles they were delighted to take on; this was happiness for them.  We talked about how important it is to start out slow when working with powdered sugar because it can go everywhere.  They were very good listeners and soon Caden was asking me if he could increase the speed to 4 miles an hour (the four on the speed control) and Maisie was ready to unlock/lock so we could scrap the sides of the bowl.

For me the day had already been filled with baking and decorating the baby’s birthday cake for later in the week; and I’d cleaned up several colors of frosting in pastry bags.  But the frosting we made for the turkey was similar to thick cement – I kept looking at the front of the package thinking how did they get the outlining of frosting around the pieces so the tiny ball candy could adhere to it.  If you’re a grandma and have been in a similar situation, I know you’ll understand how sometimes you miss essential pieces like the pastry bag – although I don’t think the frosting would have come out very easily – when managing a project with two little ones.  I found a butter knife and started loping frosting on the turkey cookie pieces only to discover those little candies just rolled off onto the floor.  Then my grandson’s elbow caught his bowl (yes, full of the little rolling devil candies and off they went on the floor.)  Caden glanced over for my reaction.  By this time, I laughed the laugh of a person knowing that this would soon be over.  The only thing left was for the limited gummy and m&m candy to be pushed into the unattractive gobs of icing I had sloped onto the turkey because what the children really wanted to do is eat the 12 pieces of candy the kit had allotted each of them.  While they pushed the candy into the drying cement frosting, I was still trying to figure out how to brace the bird so it would quit toppling over.

Finally the candy that was adhered  5 minutes before had been picked clean by the children’s hands and was sitting in their little tummies, sticky hands had been washed, teeth brushed and Charlie Brown’s Thanksgiving was on the tv.  I gave my husband the option of getting the baby ready for bed which included a diaper change or cleaning up the turkey fiasco which had left the dining room and kitchen a disaster.  He chose cleaning up the destruction the now naked turkey had left; and I wrestled with a wiggly precious boy getting clothes off – pjs on.  While diaper changing I noticed Jesse pushing something back and forth with his tongue and discover a small piece of gray lego in his mouth.  I am able to remove this and look forward to sitting in a dark room in a comfy rocking chair feeding him a bottle.

In the dark, I am in awe of my daughter and son-in-law – how do they do it day in and day out?  I wonder how could a simple turkey gingerbread kit make me feel like I’ve been to battle and lost?  In a brief moment of self pity, I even think why would my daughter do this to me?

Soon all the children are asleep in their beds, their grandpa has headed home because he has an early bedtime; and I hear the garage door open.  My daughter sees the turkey on the counter without any adornment except the splotches of frosting that look more like a bad skin condition and asks how the project went; the turkey mocks me.   I told her from now on, I can’t do these type of projects with the children – it’s too much.  These people who design these kits can’t have tested them out with real children and tired grandmas.  No one in their right mind has you mixing up frosting with eggs – don’t get me started on the raw egg in edible frosting for children and those ball candies that are barely visible to the naked eye and then have the audacity to not stick to the frosting – there are no words.  

My daughter smiles at me and the turkey; then looks at the back of the box and explains when she has bought the kits in the past they always came with ready-made frosting and bigger sprinkles.  We laugh as Tamara begins breaking off pieces of the turkey cookie and saying how good it tastes. While her eyes glaze over from the gingerbread happiness, I repeat there will be no more gingerbread kits for this grandma.  A note to the wise – if you see this kit in the store or in your adult child’s home – run!
