Almond Joy Bites

This is a healthy alternative to an Almond Joy Candy Bar or a Girl Scout Samoan Cookie.  Plus they are ready in no time since you don’t even bake them.

Ingredients
  1. 2 cups pitted dates, merjoii
  2. 1 cup unsweetened shredded coconut
  3. 1/4 tsp pure coconut extract
  4. 1/4 tsp salt
  5. 1/2 cup semi sweet chocolate chips
  6. 1/3 cup chopped raw almonds
  7. Coconut Water, Almond Milk, or water if needed
  8. Mini cupcake liners and sprinkles and nuts to decorate
Instructions
  1. Mix all ingredients except coconut water/almond milk in food processor. Add a small amount of coconut/water or almond milk, if needed. The mixture should hold together but not be overly wet. roll into small balls, dip into sprinkles, place in liner and top with a nut.
  2. Store in airtight container in refrigerator or freezer.
