I love the ingredients in this smoothie – coconut, cherry, orange and a little banana to cream it all up.

 Think about making one of these for a breakfast, lunch or snack.

  1. 1/2 cup coconut milk
  2. 1/4 cup unsweetened almond milk or milk of your choice
  3. 1/2 orange, juiced
  4. 1 cup frozen cherries
  5. 1/4 banana
  6. 1 Tbsp ground flax seed
  7. 1 serving of vanilla protein powder
  8. 3 ice cubes

Tropical Delight Smoothie

This smoothie is the consistency of a Wendy’s frosty so it works well as a beverage but is also thick enough to be eaten with a spoon and could easily be a dessert. It will stay extra cold if you serve in a frosted cup.

Ingredients
  1. 1 1/2 cup of liquid (a mixture of filtered water, coconut water, unsweetened almond milk)
  2. 1/4 cup of frozen pineapple
  3. 1/4 cup of frozen mango
  4. 1/4 cup of frozen banana
  5. 1 serving of a good quality vanilla protein powder
  6. 1 tbsp unsweetened coconut
  7. 1/2 tsp of pure coconut extract
  8. 1/2 Tbsp ground flax seed
  9. Ice cubes as needed to thicken
Instructions
  1. Blend ingredients until smooth and you reached desired consistency.
Notes
  1. Frozen fruit adds flavor and a thick consistency.

Blueberry Coconut Popsicles

Popsicles are so fun and making them from fruit is a great way to get health benefits from eating a treat.  My grandson thought they were pretty yummy!

Ingredients

2 cups organic frozen blueberries
1 banana
1 can full fat coconut milk
1/2 tablespoon vanilla extract
3 tablespoons blueberry fruit spread

Things You Will Need

Blender or Food Processor

Popsicle Molds – I found mine at Sur La Table 

Directions

Blend ingredients until smooth.

Pours liquid into molds and place tops in.

Place in freezer for 5-8 hours.

When ready to serve, run the bottoms under warm water to release from mold.

Note – Too much liquid and not enough molds?  No problem – Place the extra popsicle liquid in a square or rectangle dish (plastic will work).  Freeze for 5-8 hours.  Let sit out for a few minutes and then using a fork or spoon scrape into flaky crystals.  For a chunkier consistency a potato masher can be used.  Store sealed in freezer.  To Serve:  Place in fancy glass, top with a tsp of fruit spread and a piece of fruit.
