Butter Cookie Dough and Vanilla Frosting

I’ve been using this recipe for over 20 years.  The possibilities are endless because there are so many cookie cutters, sprinkles and colors for frosting.  They work into any party theme or holiday and can be prepared weeks in advance and kept in the freezer until needed.

Cookies
  1. 1-1/2 cups (3 sticks) softened butter
  2. 1 cup sugar
  3. 1 large egg
  4. 2 tsp vanilla extract
  5. 1/2 tsp salt
  6. 4 1/2 cups spelt flour or flour of your choice
Vanilla Frosting
  1. 2 cups powdered sugar
  2. 1/4 cup softened butter
  3. 2 Tbsp of almond milk or milk of your choice
  4. 1 tsp. vanilla
Cookies
  1. Preheat oven to 350 degrees.
  2. Beat Butter, Sugar, Egg, Vanilla and Salt in large bowl until light and fluffy.
  3. Gradually add flour; beat until well mixed.
  4. Cover dough with plastic wrap and chill in refrigerator for 1 hour or place in freezer for 30 minutes
  5. Work with 1/4 of the chilled dough at a time (keep remaining dough chilled).
  6. Place the dough between two long piece of wax paper that have been lightly dusted with flour until it's 1/4 inch thick.
  7. Remove the wax paper and cut into desired shapes.
  8. Place cookies on ungreased cookie sheets.
  9. Bake 8-10 minutes until cookies are lightly browned.
  10. Remove cookies to cooling rack and cool completely before frosting.
  11. Vanilla Frosting
  12. In large bowl, beat all ingredients together until smooth and creamy. Add a little more milk until frosting is the desired consistency. A thicker frosting may be needed for frosting bag where a thinner frosting is ideal for spreading with a knife.
Notes
  1. Remember you can always add color to your frosting to match a theme of a party or special occasion. Craft stores have colors you can buy in sets or individually - look in cake supply section
