Ingredients
  1. 1 cup of vanilla unsweetened almond milk
  2. 1 Serving of Protein Powder
  3. Sprinkling of Cinnamon
  4. 1 Tbsp of Chia Seed
  5. 1 Tbsp of Ground Flax Seed
  6. 1 cup of frozen peaches
  7. 1 cup of fresh spinach
  8. 4-5 ice cubes
Instructions
  1. Blend together and enjoy.
Notes
  1. Chia will act as a thickening aid - so have a spoon available just in case.

Chia Almond Butter Fruit Dip

This is a yummy fruit dip to make and makes eating an apple seem not so ordinary.  You’ll want to let the yogurt mixture sit for an hour or two to let the chia soften.

Almond Butter and Apples go so well together and this dip gives some fluff to the almond butter.

Ingredients
  1. 4 Tbsp Greek Plain Yogurt (I use Fage 2%)
  2. 1 Tbsp All Natural Almond Butter (I used Justin's Classic)
  3. 7 drops of Coconut Stevia (maple syrup or honey could also be used)
  4. 1/2 tsp cinnamon
  5. 1 Tbsp chia
  6. 1 Tbsp raw sunflower seeds
Instructions
  1. Mix all ingredients except sunflower seeds in a bowl until smooth (you can do this with a spoon) Then add in sunflower seeds and stir.
  2. Place in refrigerator for 2 hours before serving with a sliced apple.

Coconut Chia Pudding – The new tapioca

What if you could have a dessert that was actually providing some sound nutritional value? There is a seed available called chia and when placed in liquid it acts a lot like tapioca. The difference is chia has 3 grams of protein and 5 grams of dietary fiber per tablespoon. Place the pudding in a pretty dish – like this one that belonged to my grandmother – with some cut up fruit – a dollop of whipped cream and a sprinkle of hemp seed and you have something special.

Ingredients
  1. 1 cup raw, unsalted cashews, rinsed
  2. 1 cup coconut water
  3. 2 ½ cups purified water
  4. 1 Tbsp pure maple syrup
  5. 6-10 drops of liquid coconut stevia
  6. 1/2 cup unsweetened coconut
  7. 1 Tbsp pure coconut extract
  8. 3/4 cup whole chia seeds
Instructions
  1. Place the cashews, waters, maple syrup, stevia, coconut, and coconut extract into a high powered blender (like a Vitamix - If you don't have a Vitamix - soak cashews in water for 1-2 hours, then drain) and blend until smooth and creamy. Pour into a mixing bowl, then add the chia seeds and whisk together. Transfer to a glass storage container like a quart canning jar. Shake a few times for the next 30 minutes until it starts to hold together. Place in refrigerator for at least 3 hours. Garnish as desired.
Notes
  1. A tablespoon or two of this pudding will also thicken smoothies.
