There are times in our life when eating something creates a marker in our memories. I still remember the first time I had this salad. I was a young mom, new to my neighborhood in Arizona and was invited to lunch by another young mom down the street. That invite – this recipe – helped me ease into my new home. Never underestimate the power of hospitality and a good dish. Since that time I’ve made some changes to the recipe and it has become one of my adult daughter’s favorites.
Asian Chicken Salad

Serves 6
Crisp Salad, crunchy noodles and a yummy homemade asian salad.
Salad Ingredients
- 1 can Crunchy Chow Mein Noodles
- 4 cups Romaine Lettuce, cut in thin strips
- 1 cup Purple Cabbage, chopped
- 2 cups Cooked Chicken, chopped
- 1 cup Carrot, shredded
- 2 Celery Stalks, sliced thinly
- Celery Stalks, sliced thinly
- ¼ cup Sliced Green Onions
- 1 Tbsp Sesame seed
Ginger Dressing Ingredients
- 1/3 cup Canola Oil
- ¼ cup White Wine Vinegar
- 1 Tablespoon Sugar
- 2 teaspoons Soy sauce or Tamari Sauce
- ½ teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon Ginger, ground
Instructions
- Place lettuce, chicken, cabbage, carrot, celery and onions in 4-quart bowl. Top with Noodles and Sesame Seeds and Dressing.
