This is an amazing custard-like pie that is very easy to make.

  1. ¾ cup white spelt flour or flour of your choice
  2. 4 eggs
  3. 1/3 cup freshly squeezed orange juice
  4. 1/2 lemon, squeezed
  5. 1/2 cup sugar
  6. 2 Tbsp honey
  7. 3/4 cup sweetened shredded coconut
  8. 1 Tbsp vanilla extract
  9. 1 ½ cups almond milk, unsweetened or milk of your choice
  10. 1/4 cup butter, melted
  11. 1 tsp freshly grated orange zest
  12. Fruit Spread, your choice - I used an apricot
  13. Fresh Strawberries
  1. Preheat oven to 350 degrees.
  2. Throw all ingredients in your blender (I use a Vitamix) and blend until well combined.
  3. Pour into a well greased standard 9-inch pie dish and bake for about 1 to 1-1/2 hour.
  4. Test the pie with a skewer. When it comes out clean it is done.
  5. If it starts to brown too much on the top – cover lightly with foil to continue baking without disturbing the pretty top.
  6. Cool completely - When ready to serve, spread with fruit spread to create a glaze and place sliced strawberries on the side.
  7. Store in refrigerator.
  8. Serves about 8
  1. For Gluten Free - use white rice flour.
