Soy Reduction

A soy reduction is easy to make and works well anytime you want to add another layer of flavor – drizzle on grilled fish, cooked veggies or place a thin layer in the bottom of a salad bowl.  Because wheat is something in our family, we need to be careful of – I use tamari sauce.  Want to know the difference between soy sauce and tamari sauce? – Read Here

A sauce that can be used over fish, chicken, cooked veggies or in a salad

Ingredients
  1. 1/4 cup light soy sauce or tamari sauce
  2. 1/2 teaspoon each minced garlic and ginger
  3. 2 teaspoons sugar
  4. 2 tablespoons rice vinegar
  5. 1/4 tsp of sesame seed oil
  6. salt and pepper

Instructions
  1. Combine ingredients in a small saucepan, heat and reduce until syrupy; drizzle through a strainer

Combine all ingredients into a small saucepan

Soy Reduction - finished
After reduction – place through a small mesh colander.  This will catch all the small pieces of ginger and garlic.
