This recipe creates a marvelous granola from a medley of seeds and nuts.

It works well as a cereal, snack, on top of yogurt parfait or a garnish on a dessert.

Ingredients
  1. 2 cups raw pumpkin seeds
  2. 2 cups raw sunflower seeds
  3. 3 tablespoons hemp seeds
  4. 1 cup of unsweetened coconut flakes
  5. 2 teaspoons ground cinnamon
  6. ½ to 1 teaspoon ground ginger
  7. ¼ teaspoon sea salt
  8. ¼ cup pure maple syrup or Wax Orchards Fruit Sweet
  9. ¼ cup melted coconut oil
Instructions
  1. Preheat the oven to 300°F.
  2. Line a large, rimmed baking sheet with parchment paper.
  3. Place the pumpkin seeds, sunflower seeds and coconut in a food processor fitted with the “s” blade.
  4. Process until you have a chunky, coarse meal.
  5. Pour into a medium mixing bowl and add the hemp seeds, cinnamon, ginger, and salt; stir together.
  6. Add the maple syrup or Wax Orchards Fruit Sweet and coconut oil; stir together well.
  7. Spread the mixture out onto the prepared baking sheet and bake for about 35 minutes, turning the granola over about halfway through baking.
  8. Remove from the oven. Let cool completely to crisp up.
  9. I store in a mason jar.

Here is an idea to use the granola as a dessert topper. Choose a couple of fruits, unsweetened coconut flake and drizzle with a good balsamic vinegar.

Yogurt Parfait

Yogurt parfaits are always a welcome breakfast or dessert.  They are especially delicious when a homemade granola is utilized.  Try Quinoa Granola or pick up a granola at the grocery store.  I like to use a plain yogurt – this way I can use a fruit spread to make it any flavor I want.  Greek yogurt can also be used.

  2. 1 Tbsp of fruit spread, any flavor
  3. 1 cup of fresh fruit, sliced or blueberries
  4. Granola

Quinoa Granola

Quinoa is a great source of protein so I was excited when I saw a recipe using this grain in a granola.  I made a few changes to the recipe and was pleasantly surprised how good it is.  Granola can be used as a cereal, in a yogurt parfait, or sprinkled on top of a garden salad or  pancakes.

Ingredients
  1. 3 cup quinoa, cooked
  2. 3 cup rolled oats
  3. 1 cup chopped pecans
  4. 1/2 cup raw sunflower seeds
  5. 1 cup flaked coconut, unsweetened
  6. 1/2 cup sweetened coconut
  7. 3/4 tsp cinnamon
  8. 2/3 cup coconut oil, melted
  9. 3/4 cup honey or maple syrup
  10. 1/2 cup fruit spread, any flavor
  11. 1 Tbsp vanilla extract
Instructions
  1. Preheat oven to 350.
  2. In a large bowl combine quinoa, oats, pecans, sunflower seeds, coconut, and cinnamon and set aside.
  3. In a pan, whisk together coconut oil, honey or maple syrup, and fruit spread. Warm over low heat until well combined, stirring often. Remove from heat and add vanilla extract. Let cool slightly.
  4. Pour wet ingredients over dry ingredients and stir until evenly distribute.
  5. Spread onto 2-3 baking sheets lined with parchment or foil and bake for 30-40 minutes (or until golden), stirring every 10 minutes. Each oven will be different so watch carefully.
  6. Remove from oven and cool completely.
  7. Store in airtight container.
Notes
  1. Cook the quinoa a day before so that part is ready to go when you are ready to put the granola together.
  2. A mason jar filled with granola makes a tasty gift.
