This is one of my favorite salads. It is so pretty – mainly because you don’t toss it – you sprinkle the items one layer at a time. It reminds me of the children’s book, The Napping House.
- (No amounts are given - place the amount that you like of each ingredient)
- Romaine, chopped
- Kale, chopped
- Purple Cabbage, shredded
- Tomato (I prefer heirloom), cut in wedges.
- Avocado, chopped
- Cut Strawberries or a few Dried Cranberries
- Slivered Almonds
- Place a layer of the romaine lettuce.
- Sprinkle the kale on top of the lettuce. (Chop kale, place in a bowl with a little olive oil and massage for several minutes. This will break the kale down to where it is tender)
- Sprinkle the purple cabbage on top of the kale.
- Sprinkle the tomatoes on top of the purple cabbage.
- Sprinkle the avocado on top of the tomatoes.
- Sprinkle the cranberries on top of the avocado.
- Sprinkle the almonds on top of the cranberries.
- Serve with dressing of your choice and season as desired.

Extra Special Cookies – This is a flour based cookie that uses peanut butter and coconut. They are sprinkled with a healthy topping.
Yogurt Parfait – Layers of a healthy flavored greek yogurt, granola, coconut and fruit – can you say breakfast, dessert or snack?
