Marinara Sauce

This recipe came about because I was making 2 pans of  Brown Rice Pasta Lasagna for a family dinner and needed marinara sauce. While at the grocery store I read the label off the brand I usually used and was disappointed that sugar was one of the first ingredients and that soy products were used.

I was happy to see that my grocery store had a brand that didn’t contain these ingredients but at $8.00 a quart, the lasagna became quite pricey.  So I decided to make my own at a fraction of the price.  

Marinara Sauce
Marinara sauce is not meant to be a long simmering sauce. It is fast and perfect for serving over pasta or can be used when making an italian dish.

Ingredients
  1. 2 28 oz whole or crushed tomatoes (Note: if using whole tomatoes, put through blender to desired consistency)
  2. 1 15.5 oz diced petitie tomatoes
  3. 1 6 oz tomato paste
  4. 1 onion, diced
  5. 4 garlic cloves, diced
  6. 2 Tbsp of olive oil
  7. 1 Tbsp dried oregano
  8. 2 tsp dried basil
  9. 1 tsp of salt
  10. 1 tsp of pepper
  11. 1 handful fresh basil, chopped
Instructions
  1. Heat oil in dutch oven and saute onion until tender.
  2. Add garlic and stir continuously for 60 seconds.
  3. Add all tomatoes and seasonings. Do not use the fresh basil yet.
  4. Bring to a slow bowl and immediately turn down to a simmer. Cover and cook for 20 minutes.
  5. Remove from heat and add fresh basil
Notes
  1. Suggestion - Double this recipe and freeze the leftovers.
  2. Makes 3 quarts of sauce.

Perfect Wednesday Salad

Yesterday (a Tuesday) I decided I would treat myself to a salad at a nearby restaurant for lunch which ended up being pretty substandard. So this morning I headed to my refrigerator and pulled some salad fixings out and created a lunch to be proud of.

 I like to cook a few pieces of chicken, slice and divide up into freezer bags.  This way cooked chicken is just a freezer door away.

Ingredients
  1. Romaine Lettuce, chopped
  2. Cauliflower florets
  3. Cucumber, sliced and quartered
  4. Carrots slices
  5. Cherry tomatoes, cut in half
  6. Green Onion, sliced
  7. Strawberries - sliced
  8. Dried Fruit (cranberries or pear), optional
  9. Raw Sunflower Seeds
  10. Cooked Chicken, sliced (optional if you don't want the chicken)
  11. Vinagarette Dressing
Instructions
  1. Place all ingredients together and enjoy.

Turkey Sloppy Joes

This recipe uses ground turkey and ingredients that are easily found in the cupboard.    Taking a few extra minutes to double the recipe will provide an easy dinner in the future or yummy leftovers for lunch.

Ingredients
  1. 1 pound Lean Ground Turkey or Vegan Crumbles*
  2. 1/2 Medium Green Pepper, chopped
  3. 1/2 Medium Red Pepper, chopped
  4. 1/2 Onion, chopped
  5. 1 cup Barbecue Sauce
  6. 1/8 tsp Cayenne Pepper
  7. 4-6 Medium Multi-Grain Hamburger Buns
  8. Optional Cheddar Cheese, shredded
  9. Optional Mixture of Chopped Lettuce, Cabbage and Grated Carrots

  1. 1 pound Lean Ground Turkey or Vegan Crumbles*

Directions
  1. Brown turkey in skillet coated with cooking spray over medium heat. Break meat up until it is no longer pink. Place the cooked meat in a colander with smaller holes and continue to break meat down so the pieces are small.
  2. Spray skillet with cooking spray and cook onions and peppers until tender.
  3. In large bowl - combine meat, onions and peppers, BBQ sauce and cayenne pepper and mix well.
  4. Top bottom half of bun with turkey mixture and add cheese and lettuce mixture, if desired.
