A wonderful combination of greens, veggies, olives, quinoa and pecans

  1. 1/3 cup of seasoned quinoa (see below for recipe)
  2. Kale - cut in strips
  3. Spinach
  4. Microgreens
  5. Romaine lettuce - cut in strips
  6. Cherry Tomatoes - cut in half
  7. Cucumber - sliced thin
  8. Mini Pepper - sliced thin
  9. Black Olives - sliced thin
  10. Pecan pieces
  11. Red Wine Vinegar
  12. Lemon Juice
  13. Salt and Pepper
  1. You can use any combination of these ingredients.
  2. Top with the quinoa (cold)
  3. Sprinkle red wine vinegar on top.
  4. Squeeze lemon juice on top.
  5. Season with salt and pepper, as desired.

You won’t go wrong making this versatile quinoa dish.  

Seasoned Quinoa

Serve warm as a side dish, add some avocado, tomato, cucumber with an oil and vinegar based dressing for a quick lunch or place on top of a green salad.  Cooked quinoa has 160 calories, 2.5 grams of fat, 3 grams of fiber and 6 grams of protein per 1/3 cup.  It is also gluten free.  For more information click HERE  

  • Seasoned Quinoa
    A wonderful side dish, base for salad or topping for green salad that adds protein to your diet.

    1. 2 cups cooked quinoa
    2. 1 tbsp oil
    3. 1 small onion, finely chopped
    4. 1- 4 oz can of chopped green chili
    5. 2 tsp cumin powder
    6. 1/4 tsp turmeric
    7. 1/2 tsp salt (or to taste)
    8. 1/2 cup chopped cilantro leaves
    9. Juice of 1 lemon
    1. Mix seasonings together in small bowl and set aside.
    2. Heat oil in skillet.
    3. Saute onion over medium heat.
    4. Turn down heat and add in seasoning. Stir until onion is coated.
    5. Add in cooked quinoa and green chili combining with onion mixture.
    6. Remove from heat and squeeze lemon over - stir to incorporate.
    7. Top with fresh chopped cilantro.
    1. Trying to cut back on the oil? Use vegetable broth to sauté onion.

Quinoa Granola

Quinoa is a great source of protein so I was excited when I saw a recipe using this grain in a granola.  I made a few changes to the recipe and was pleasantly surprised how good it is.  Granola can be used as a cereal, in a yogurt parfait, or sprinkled on top of a garden salad or  pancakes.

Quinoa Granola
A granola that uses quinoa, a great source of protein. The use of the fruit spread add a variety of taste depending on what flavor is chosen.

  1. 3 cup quinoa, cooked
  2. 3 cup rolled oats
  3. 1 cup chopped pecans
  4. 1/2 cup raw sunflower seeds
  5. 1 cup flaked coconut, unsweetened
  6. 1/2 cup sweetened coconut
  7. 3/4 tsp cinnamon
  8. 2/3 cup coconut oil, melted
  9. 3/4 cup honey or maple syrup
  10. 1/2 cup fruit spread, any flavor
  11. 1 Tbsp vanilla extract
  1. Preheat oven to 350.
  2. In a large bowl combine quinoa, oats, pecans, sunflower seeds, coconut, and cinnamon and set aside.
  3. In a pan, whisk together coconut oil, honey or maple syrup, and fruit spread. Warm over low heat until well combined, stirring often. Remove from heat and add vanilla extract. Let cool slightly.
  4. Pour wet ingredients over dry ingredients and stir until evenly distribute.
  5. Spread onto 2-3 baking sheets lined with parchment or foil and bake for 30-40 minutes (or until golden), stirring every 10 minutes. Each oven will be different so watch carefully.
  6. Remove from oven and cool completely.
  7. Store in airtight container.
  1. Cook the quinoa a day before so that part is ready to go when you are ready to put the granola together.
  2. A mason jar filled with granola makes a tasty gift.
