Instant Pot Recipe Sources

I often get asked where I find my recipes for the The Instant Pot.  In fact my friend, Ellen, asked me a few minutes ago.  It’s been on my list to post so thanks Ellen for the motivation.  For someone who was timid about using the Instant Pot Pressure Cooker over a year ago and sat 20 feet away while I did the water test, it now has a permanent place on my kitchen counter.  I started with the brown rice, quinoa and steel oats recipes from the cookbook that came with the appliance. Soon I wanted a little more and begin branching out into blogs which then led me to some amazing cookbooks.  There are times I’ll take two recipes from different sources and tweak it to my palate.

Appliances are only as good as the recipes going into them.  Pictured below is Chicken Tortilla Soup from the Instant Loss Cookbook.  This recipe is quick and delicious because everything goes into the pot  at once and 13-15 minutes later it is done.  I am a big fan of homecoming because unlike going out to eat – the cook is in control of what ingredients and how much of those ingredients go in.

Orange Rice Pilaf

It’s citrus season here in the Phoenix, AZ area.  So when a friend offered me a bag of  beautiful oranges,  I said “yes and thank you.”  

This rice isn’t hard to make but it tastes as if you’ve been slaving all day.  Below you will find stovetop directions as well as making this in an Instant Pot Pressure Cooker.

Orange Rice Pilaf
Serves 6
A delicious rice with a light orange flavor and the crunch of almonds.

Ingredients
  1. 1/2 cup chopped onions
  2. 1 Tbsp butter
  3. 1 cup long grain or jasmine rice
  4. 1 cup chicken broth
  5. 1/2 cup orange juice
  6. 1 tsp fresh orange peel
  7. 1/4 cup sliced or chopped almonds
Instructions
  1. STOVETOP
  2. In a skillet, saute onions and rice with butter until golden brown (3-5 minutes). Add remaining ingredients; heat to a boil. Reduce heat; cover and simmer 20 minutes.
  3. INSTANT POT
  4. Set to Saute. Place butter and onions and sauce until golden brown. Add remaining ingredients (except almonds). Lock lid down. Set to Manual for 4 minutes with an Instant Release. Stir in almonds.

Another idea:  Adding cooked chicken or shrimp to rice takes it from side dish to main dish.

Rice Krispie Gluten Free Cake Bites

I found this recipe as I was going through Pinterest late one night and am so glad I did because they take an old-time favorite and turn it into something even better.

If you have been following my blog for long – you know I like sprinkles and so I doctored these up with a little royal frosting and sprinkles.

Rice Krispie Gluten Free Cake Bites

Ingredients
  1. 1 bag of marshmallows
  2. 4 Tbsp Butter
  3. 1 1/2 tsp pure vanilla extract
  4. 6 cups of rice krispies
  5. 1/2 cup of vanilla cake mix - I used Pillsbury Gluten Free Funetti Mix
  6. Handful of sprinkles
  7. Extra Butter
  8. Royal Icing
Instructions
  1. Prepare a cookie sheet with parchment paper
  2. Melt marshmallows and butter over medium heat in large pan, stirring constantly.
  3. Remove from heat. Add vanilla, rice krispies and sprinkles and mix well.
  4. When mixture is cool enough to handle, butter your hands and form into ping pong size balls. Place on parchment paper. If mixture becomes hard to manage, rewarm slightly on stove.
  5. Mix up frosting ingredients and drizzle over top. Add more sprinkles.
