Spring Chicken Salad with Fresh Basil Dressing

Ingredients
  1. Salad Ingredients
  2. Organic Spring Mix
  3. Organic Carrots, Shredded
  4. Organic Celery, Shredded
  5. Purple Cabbage, Shredded
  6. Snap Peas, cut into small pieces
  7. Avocado
  8. Organic Cooked Chicken, cut into small pieces
  9. Dressing
  10. 1/3 Red Wine Vinegar
  11. 2 Tbsp of Olive Oil
  12. 1/4 tsp of garlic powder
  13. 1/2 tsp of salt
  14. 1/4 tsp of ground pepper
  15. 3 Tbsp of fresh basil, chopped
Instructions
  1. No measurements for the salad are given. You can use the ingredients listed and make a single serving or a large salad for a family or group.
  2. Dressing
  3. Combine all dressing ingredients and shake well. (I use a small mason jar.)

Chopped Cashew Chicken Salad

This recipe was recreated from a salad I ordered at Karl Strauss Brewery in Calsbad, CA.  I was inspired to learn how to make a soy reduction which is one of the three recipes that goes into this lovely dish.

Ingredients
  1. Soy Reduction Recipe (link listed in blog post)
  2. Miso Vinaigrette Dressing (link listed in blog post)
  3. Cooked Chicken, chopped
  4. Chopped Green Cabbage
  5. Chopped Romaine Dressing
  6. Broccoli, cut in small pieces
  7. Tomato, Chopped
  8. Carrot, Julienned
  9. Celery, Sliced
  10. Cashews, finely chopped
  11. Cilantro, chopped
  12. Salt and Pepper to taste.
Instructions
  1. Boil 2 cups of water. Place broccoli in and let sit for a few minutes until broccoli turns bright green. Place broccoli in ice water to stop cooking and drain.
  2. Place a small amount of the soy reduction in serving bowl.
  3. In another bowl - place salad ingredients. Place desired amount of dressing and mix gently to coat.
  4. Place in serving bowl
Notes
  1. This salad can be made without chicken, if desired.

Soy Reduction

A soy reduction is easy to make and works well anytime you want to add another layer of flavor – drizzle on grilled fish, cooked veggies or place a thin layer in the bottom of a salad bowl.  Because wheat is something in our family, we need to be careful of – I use tamari sauce.  Want to know the difference between soy sauce and tamari sauce? – Read Here

A sauce that can be used over fish, chicken, cooked veggies or in a salad

Ingredients
  1. 1/4 cup light soy sauce or tamari sauce
  2. 1/2 teaspoon each minced garlic and ginger
  3. 2 teaspoons sugar
  4. 2 tablespoons rice vinegar
  5. 1/4 tsp of sesame seed oil
  6. salt and pepper

Instructions
  1. Combine ingredients in a small saucepan, heat and reduce until syrupy; drizzle through a strainer

Combine all ingredients into a small saucepan

Soy Reduction - finished
After reduction – place through a small mesh colander.  This will catch all the small pieces of ginger and garlic.
