Spaghetti Sauce

In our home my husband creates the tomato sauce that is used on our pasta.  He makes a large quantity of this amazing recipe so portions can be placed in freezer Ziploc bags for future use.

Ingredients
  1. 1- 1/2 onion, chopped
  2. 6 garlic cloves, chopped
  3. 1/3 cup olive oil
  4. 3/4 cup red wine, good quality
  5. 5 28-oz can diced tomatoes, undrained
Instructions
  1. In a large dutch onion saute onion and garlic over medium heat until transparent.
  2. Add wine and simmer until reduced by half.
  3. Add tomatoes. Bring to a low boil. Reduce heat to a simmer.
  4. Cover for an hour. Then remove cover for 2 hours until desired consistency.
  5. Season to taste with salt and pepper.
  6. Serve over pasta - We like Trader Joe's Brown Rice Pasta.
  7. Serving suggestion - top with fresh basil and sliced Kalamata olives.
  8. Meat can be added if desired.
Notes
  1. Freezes well.
