Sprinkled Popcorn Treat

I saw this idea and had to try it.  Here was my list of Whys?

  • I could incorporate organic popcorn
  • I could incorporate gluten free pretzels
  • I could incorporate raw nuts of my choice
  • There was chocolate
  • It was easy and a no bake recipe
  • The finished product shouted FUN!
  • And the number 1 reason – There were sprinkles involved.  

So I went to my sprinkle drawer – don’t judge!  You might be surprised to know how many times sprinkles has allowed me to look more together than I felt on a given day.  

The recipe below is basic and add-ins could definitely be incorporated:  mini marshmallows, chocolate chips, dried fruit cut up, shredded coconut, cinnamon, etc.  But I wanted to keep mine in a less sweet mode so I stuck to 5 ingredients.

A very easy treat with a touch of sweetness that can incorporate healthier ingredients.

Ingredients
  1. Popped Organic Popcorn
  2. Raw Nuts, your choice (I used pecans)
  3. Gluten Free Pretzels, broke in small pieces
  4. White Chocolate Chips
  5. Sprinkles
  6. (There are no measurements - you decide how much of each ingredient you want to use)
Instructions
  1. Line a cookie sheet with parchment paper.
  2. Place popcorn, pretzels, nuts on top of parchment paper.
  3. Place white chocolate chips in microwavable bowl and heat in 20-30 second intervals, stirring each time until smooth.
  4. Drizzle white chocolate using a spoon over the mixture on cookie sheet. (Note: if you would like a little more sweetness you can dip one side of some of the nuts or pretzels into white chocolate before you drizzle.)
  5. Then immediately (while chocolate is still warm) shake sprinkles on top, especially where the chocolate landed on the mixture.
  6. Place in freezer or refrigerator for 15 minutes.
  7. Place mixture in bowl or individual bags for gifts and Enjoy!

This recipe would make a great contribution to a pot luck, hostess gift, neighbor gift, thinking of you gift, stocking stuffer.  Plus the ideas for coordinating with holidays and parties are endless.

I am adding this recipe to one my preschool grandchildren can help with in the kitchen. 

You may be asking why I choice the colors of sprinkle I did.  Well – I had one container that had a little of each color and this allowed me to empty the container – my contribution to downsizing a bit.

Peachy-Lime Strawberry Smoothie

Breakfast smoothies are my go-to morning food.  They are time saving, can be drank on the way to work plus there are so many different flavors that can be created, I never get bored.  But not all smoothies are created equally or provide the same nutritional value.

Ingredients
  1. 1 1/4 cup of Silk Almond/Coconut Milk
  2. 1 scoop Vegan Tropical Strawberry Shakeology
  3. 1 Tbsp Sprouts Creamy Organic Peanut Butter
  4. 3-6 Ice Cubes (this will create the thickness)
  5. 2 Tbsp of Starbucks Lime Refresher or 1/2 fresh lime juice
  6. 1/2 cup of frozen organic peaches
  7. 2 Fresh Strawberries, if desired
Instructions
  1. Blend all ingredients except fresh strawberries. Pour into glass.
  2. Mash fresh strawberries and place juice on top of smoothie. Use a toothpick to swirl color in.
  3. Note - it would also be fine to add all of mashed strawberry in for a different look and texture.

Sand Dollar Pancakes

There is nothing that says breakfast like pancakes and making them the size of sand dollars makes these fluffy delights so versatile.  So think beyond breakfast.  Take 2 of these and spread some almond or sunflower seed butter and a little 100% Fruit Spread on one of them; then put the other on top – you now have a nut and jelly pancake sandwich.  Another idea:  put a little 100% Fruit Spread on top and then smother them in sliced strawberries with a garnish (which means small amount) of whipped cream or a good quality vanilla ice cream.  Want it a little fancier – sprinkle a little cinnamon on top.

Ingredients
  1. 2 eggs
  2. 1 1/2 - 1 3/4 cup milk (I use unsweetened almond or coconut) - the amount used depends on how thick you want your pancakes
  3. 4 Tbsp of coconut oil (melt slightly until liquid - sometimes the oil can get thick)
  4. 2 cups of flour (I used 1 1/3 cup spelt but you could use whole wheat, 1/3 cup almond flour, 1/3 cup brown rice flour)
  5. 1/4 cup coconut sugar
  6. 2 tsp baking powder
  7. 1 tsp baking soda
  8. 1 tsp salt
  9. 1 tsp cinnamon
  10. Spray coconut oil (Trader Joes) or use a little of your coconut oil
Instructions
  1. Beat the eggs until frothy.
  2. Mix the rest of the ingredients in the order given.
  3. Beat until combined well but don’t over mix or your pancakes can be tough.
  4. Heat griddle between low and medium heat.
  5. Lightly grease pan with a little of the coconut oil or spray.
  6. Pour sand dollar size batter onto griddle. Cook until bubbles start to form on top. Then flip over until 2nd side is done.
Notes
  1. These freeze well and I package up 2 in saran wrap and then in a Freezer Zip Lock.
