Instant Pot Coconut Steel Oats

 

I like the chewiness of steel oats but cooking them on the stove can take awhile.  Being able to cook them in about 10 minutes using the Instant Pot makes having a dish of these handy throughout the week doable. 

Using a full coconut milk (found in the can) gives a richness to the breakfast cereal.

Ingredients
  1. 1 cup steel oats (not instant or quick cooking steel oats)
  2. 1 can organic coconut milk
  3. Water - to make 3 cups between coconut milk and water
  4. Stevia or Sugar of your choice
To finish
  1. 1 cup of non-dairy or dairy milk
  2. Sweetener of your choice - I used a few drops of liquid stevia
  3. 1 tsp cinnamon
  4. Place a serving size in a bowl and top with berries, banana, raw sunflower seeds.
Instructions
  1. Make sure your instant pot is fully assembled and the sealer is in the rim of the lid.
  2. Place oats in small mesh strainer and rinse. Drain by gently tapping sides of strainer to release water.
  3. Into a 4 cup measuring cup - empty can of coconut milk and add enough water to measure 3 cups.
  4. Place liquid into the removable container in the Instant Pot. Add oats. Use your fingers and incorporate oats into the liquid, make sure all oats are off the sides.
  5. Lock on Lid and close Pressure Valve. Cook for 8 minutes on the Manual Setting. When Beep sounds, wait 10 minutes and then release the remaining pressure.
  6. Remove Lid and stir in milk, sweetener and cinnamon. More milk can be used if you like a thinner oat cereal.

Tasty Tuesdays – Cherry Nut Steel Oats Recipe

Cherry Nut Steel Oat

I am a huge proponent of cooking once, cleaning the kitchen mess once and eating several times.  My freezer is one of my favorite appliances.  It provides me with variety and a grab and go tool that enables me to take care of myself and not get bored with my choices.  

This morning I pulled several of my healthy food ingredients and came up with a new way to eat steel oats. I also created two baked versions of steel oats – Layered Blueberry and Pumpkin-Pecan.  a version of the Baked Pumpkin Oats is in my downloadable e-cookbook and available HERE

Cherry Nut Steel Oats
Chewy steel oats with the crunch of nuts and seeds and, of course, cherries.

Ingredients
  1. 2/3 cup of cooked steel oats - I use Bob's Organic Steel Oats
  2. 1/2 - 1 Tbsp Wax Orchards Fruit Sweet or Honey or Maple Syrup, or a few drops of liquid Stevia
  3. 1-2 Tbsp of 100% Cherry Fruit Spread
  4. 1 Tbsp of raw sunflower seeds
  5. 1 Tbsp of unsweetened coconut flakes
  6. 1/2 tsp of cinnamon
  7. 1/4 tsp of nutmeg (fresh is best)
  8. 1/4 tsp of ginger
  9. 2 Tbsp of unsweetened almond milk or milk of your choosing
Instructions
  1. Prepare oats per package
  2. Mix warm oatmeal and sweetener until blended well
  3. Place Fruit Spread in center of steel oats
  4. Sprinkle the sunflower seeds and coconut around the edge of oatmeal
  5. Mix spices together and sprinkle on top
  6. Place milk on top
  7. Enjoy!

Strawberry Steel Oats Sundae

Who said sundaes are only made of ice cream?  Why not use those ice cream dishes to serve  breakfast for a change of pace?   They make such a cute presentation and are sure to be a kid pleaser. Don’t have sundae glasses? – small glasses can be used – but these dessert dishes can easily be found at thrift stores and sometimes dollar stores.  Changing things up – using something for another purpose can take the ordinary to extraordinary.

Strawberry Steel Oats Sundae
Steel Oats served in a sundae dessert dish makes breakfast extra special. Regular oats can be used but steel oats have a nutty chewy texture.

Ingredients
  1. Cooked Steel Oats (we use gluten free) - cooked per box directions
  2. 1-2 Tbsp of milk (we use unsweetened almond milk)
  3. Strawberry Fruit Spread
  4. 1 tsp cinnamon
  5. 1/2 tsp almond extract
  6. 1 Tbsp coconut flakes
  7. 1 Tbsp slivered raw almonds
  8. 6 Strawberries (5 sliced, 1 for garnish)
Instructions
  1. Mix 1 Tbsp of strawberry fruit spread, cinnamon and almond extract into warmed steel oats.
  2. Add milk, if desired.
  3. Mix in slivered almonds, coconut and 5 sliced strawberries.
  4. Spoon into sundae cups and top with a tsp of fruit spread.
  5. Garnish with a whole strawberry that has been sliced 3/4 of the way through several times and gently fan.
  6. Place on top of fruit spread.
Notes
  1. Cooking up the oats ahead of time and placing in single serving dishes makes this dish extra fast to make in the morning.
