Caramel Banana Ice Cream with Strawberry-Coconut Sauce

It’s May and it is starting to warm up here in Arizona  – just a few days ago we had our first 100 degree day.  This is an ice cream type dessert without any dairy or processed sugar.

It is so pretty in a small wine glass like this one handed down to me by my grandmother.  When serving treats find some pretty dishes that will lend itself well to portion control.

A dessert that uses only natural ingredients. Merrill dates create a caramel type flavor.

Ingredients
  1. 4-5 bananas, peeled and sliced that have been frozen
  2. 3-4 merjool dates, pitted
  3. 4-5 drops of English Toffee SweetLeaf Stevia
  4. Almond Milk - small amount
  5. Strawberry-Coconut Sauce
  6. 10 Fresh Strawberries
  7. 1/4 cup unsweetened coconut
  8. 1-2 Tbsp of pure maple syrup, if desired
Instructions
  1. Prepare bananas - Peel and slice the bananas and place on a wax paper or saran wrap line cookie sheet and place in the freezer for several hours until frozen. They can then be used or placed in a Ziplock bag and placed in freezer until ready to use.
  2. Place the bananas, dates, and stevia in food processor. Depending on the size of the food processor - may need to work in batches. A Tbsp of almond milk at a time can be added if needed but be patient it takes a while for the bananas to break down. Store in container in freezer.
  3. Strawberry-Coconut Sauce
  4. Place fresh strawberries, coconut and syrup (if desired) in a food processor. Blend until smooth.
  5. To Serve
  6. Use a small wine or dessert glass, spoon the ice cream in and then top with the strawberry sauce.

Frozen bananas are great to keep in the freezer for desserts and smoothies.

One Minute Vanilla Cake – Shortcake Style

I like to package the dry ingredients in Ziploc bags so they are ready to just add the wet ingredients into for a quick dessert.  Great cooking project for children and they also make cute gifts.

A quick project for a not too sweet dessert. Perfect project for children. It's easy and quick.

Ingredients
  1. 4 Tbsp of White Spelt Flour or flour of your choice
  2. 1/8 tsp salt
  3. 2 tsp sugar
  4. 1 packet of stevia (or 1 more Tbsp of sugar)
  5. ¼ tsp baking powder
  6. 1 Tbsp of Canola Oil
  7. 3 Tbsp Milk of Choice (I like either unsweetened almond milk or coconut milk)
  8. ¼ tsp pure vanilla extract
  9. Strawberries
  10. Pomegranates
  11. Whipped Cream
Instructions
  1. Prepare medium size ramekin or coffee cup by spraying with PAM.
  2. Mix dry ingredients together.
  3. Add wet ingredients. Mix well.
  4. Pour batter into prepared cup.
  5. Microwave on high for approximately 45 seconds. Eat warm or let cool. The cooler the cake the easier it will come out of baking dish.
  6. Split cake when cook and layer with fresh sliced strawberries, whipped cream. Garnish top with pomegranates or sliced strawberries

Strawberry Infused Iced Tea

We get very excited about a summer rain here in Arizona because it gives a small window of relief from the summer heat.  We had a series of storms this past weekend and it cooled our pool down several degrees making my morning swim a bit more pleasant.  But the humidity afterwards can be unpleasant so when I came home from work I made this iced drink to cool down.

Ingredients
  1. Strong Brewed Tea (any type will work) I used a Blueberry Herbal Tea (2 cups of hot water and 4 tea bags)
  2. Fresh Strawberries
  3. Water
  4. Stevia or Sugar, if desired
Instructions
  1. Quarter 4 strawberries.
  2. Half 6 strawberries and using a fork smash in a bowl until liquid forms. Add 1/2 tsp of stevia or sweetener of your choice into berries. Mix in 1/3 cup of water and mix until blended. Using a mesh colander strain berries and place juice into a small pitcher or a large mason jar.
  3. Add the tea and additional water as needed. Stir well or if using mason jar - shake.
  4. Fill a glass 1/4 of the way with ice.
  5. Place quartered strawberries on top of ice.
  6. Add more ice.
  7. Garnish with a strawberry if desired.
  8. Place the ice tea into the glass and Enjoy!
