Peachy-Lime Strawberry Smoothie

Breakfast smoothies are my go-to morning food.  They are time saving, can be drank on the way to work plus there are so many different flavors that can be created, I never get bored.  But not all smoothies are created equally or provide the same nutritional value.

Peachy-Lime Strawberry Smoothie

Ingredients
  1. 1 1/4 cup of Silk Almond/Coconut Milk
  2. 1 scoop Vegan Tropical Strawberry Shakeology
  3. 1 Tbsp Sprouts Creamy Organic Peanut Butter
  4. 3-6 Ice Cubes (this will create the thickness)
  5. 2 Tbsp of Starbucks Lime Refresher or 1/2 fresh lime juice
  6. 1/2 cup of frozen organic peaches
  7. 2 Fresh Strawberries, if desired
Instructions
  1. Blend all ingredients except fresh strawberries. Pour into glass.
  2. Mash fresh strawberries and place juice on top of smoothie. Use a toothpick to swirl color in.
  3. Note - it would also be fine to add all of mashed strawberry in for a different look and texture.

Strawberry Steel Oats Sundae

Who said sundaes are only made of ice cream?  Why not use those ice cream dishes to serve  breakfast for a change of pace?   They make such a cute presentation and are sure to be a kid pleaser. Don’t have sundae glasses? – small glasses can be used – but these dessert dishes can easily be found at thrift stores and sometimes dollar stores.  Changing things up – using something for another purpose can take the ordinary to extraordinary.

Strawberry Steel Oats Sundae
Steel Oats served in a sundae dessert dish makes breakfast extra special. Regular oats can be used but steel oats have a nutty chewy texture.

Ingredients
  1. Cooked Steel Oats (we use gluten free) - cooked per box directions
  2. 1-2 Tbsp of milk (we use unsweetened almond milk)
  3. Strawberry Fruit Spread
  4. 1 tsp cinnamon
  5. 1/2 tsp almond extract
  6. 1 Tbsp coconut flakes
  7. 1 Tbsp slivered raw almonds
  8. 6 Strawberries (5 sliced, 1 for garnish)
Instructions
  1. Mix 1 Tbsp of strawberry fruit spread, cinnamon and almond extract into warmed steel oats.
  2. Add milk, if desired.
  3. Mix in slivered almonds, coconut and 5 sliced strawberries.
  4. Spoon into sundae cups and top with a tsp of fruit spread.
  5. Garnish with a whole strawberry that has been sliced 3/4 of the way through several times and gently fan.
  6. Place on top of fruit spread.
Notes
  1. Cooking up the oats ahead of time and placing in single serving dishes makes this dish extra fast to make in the morning.

Banana-Strawberry Better Than Ice Cream

What’s so special about this frozen dessert?  It is made with yummy fruit, dates and no cream or added sugars.  It can be made in a few minutes so that you can sprinkle with your favorite toppings.

Ingredients
  1. Ingredients
  2. 1 Frozen Peeled Banana (Tip: Peel bananas, cut in half and store in Ziplock Bag in Freezer - This way you will have bananas available when you need them.)
  3. 2 cups of Frozen Strawberries
  4. 4 Dates (These can be found in the same area as raisins)
  5. 1/4 cup of milk (your choice - dairy, almond, etc)
  6. 3 - 4 Ice Cubes
  7. Topping Ideas: Raisins, Shredded Coconut, Mini Chocolate Chips, Sunflower Seeds or Nuts (raw preferably), Sprinkles (Picture is topped with raw pecans and hemp seeds.)
Instructions
  1. Place banana, strawberries and milk into food processor or heavy duty blender (it will need to be a heavy duty one) and blend, stopping occasionally to scrape sides. Add in dates and blend until smooth. To make ice cream thicker add ice cubes 2 at a time. This will make 2 servings. Top as desired. Leftovers can be placed in the freezer.
